Life Made Simple!!



So in efforts to save our family a little money in the food area I decided (and yes I'm just now doing this after being married for 5 years) to plan out all our meals for a week and make a grocery list according to that. Before I would just buy random things and then never really have all the ingredients for good meals so we ate alot of bean and cheese burritos.  So now I only buy what we need and have started saving and not wasting food. Also with preschool starting up I'm pretty tired in the afternoon so I figure if I'm going to make lasagna or something, might as well make 2 batches and freeze one. Oh how nice it has been. So this week I made lasagna, enchiladas, taco soup and this yummy crock pot chicken stuff (we call it yummy chicken). So now next week when I'm tired and lazy I can pull something out and throw it in the oven!! I'm sure most of you are doing this and think I'm a dummy for just now getting with it. But shame on you for not telling my years ago!! If you guys have any suggestions on some meals that can be frozen let me know. If you want any recipes for some of the things I made let me know. My recipes are WAY easy and very good.  

*disclaimer* these are not pictures of my food =) I wish I had the green casserole dish though!!

Looks delish! Way to be organized! I was better at planning when I was busy and it was necessary. Lately, I mostly play it by ear. So I hear Marcie is helping you out? She's seems to really love it. I'm thinking that if I don't have a job by next Monday I will start a preschool. Like how I say it like it's no big thing? No, I know it would be a TON of work and I'm not so sure I would be good at it, but I know I can always call my amazing cousin Leah to give me the play by play and all her GREAT ideas! Now you have a reason to pray that I get a job! :)

Great ideas!! I love to make soups too (white bean and lentil) and then freeze them in single serving size baggies. I will do a huge double batch sometimes and have like 16 bags of soup for lunch or dinner. Yummy!! I also have a yummy Ribs 'n Rice recipe that can be baked or crock-pot cooked with any kind of ribs or roast you like (w/ home made BBQ sauce).

Way to go! That is great. I go through phases where I plan my meals and grocery shopping, but then I get lazy. I'm going through a lazy stage right now--so thanks for the reminder!! :) Good luck with your new year at preschool, your a great teacher. By the way, can I put Brooklyn on your wait list for next year???

Thanks! Aren't freezer meals the best!? Also, I realized that I could stop wasting some fruits like strawberries and nectarines; cheeses, vegies like green onions, potatos, squash, zucchini etc, by chopping it up and throwing it in the freezer for future meals before it goes bad. I actually shred zucchini and have it measured so I can make bread with it through the winter.

Oh good idea Dionne!!!! I waste veggies and fruit all the time so I stopped buying some but hello I can freeze them. I'll get you that recipe!! =) Leah

Oh Ryker is a funny boy! I wish we had had more time in AZ, I had fun visiting with you 3 last time! Love the skirt!! I wish I could sew clothes! And could you tell me how you cover meals to freeze them?

lol-Okay Leah, I have been married for 8 years, and I just recently got serious about plannig out my meals for the week, dependng on what is planned for the nights schedule.
Those kids are so darling. And that little girl, I could just squeeze those little cheeks. :)
